So, the truth is I'm not a food blogger, but it seems lately I've been cooking a lot and eating even more. Makes sense for two reasons: 1) the weather is so gloomy 2) I show people I love them by cooking and baking for them. With our anniversary just days away from Valentine's Day you can see why it's been all about the food. JSM, who grew up in Massachusetts and spent considerable time in San Francisco secretly loves southern food. So, to keep the celebration going I had to get creative! I'm a terrible cookie decorator and I didn't want my heart shaped cookie cutter to go to waste this year, so I made one of his favorite side dishes with a little twist. Fried grit cakes in the shape of a heart! They were simple to make once I actually found grits. (Not as easy as I thought in my neighborhood!) Here's what you do:
1. Prepare the grits as directed on the package (I use chicken broth which gives a little extra flavor when serving grits for dinner.)
2. Spoon the warm grits into a shallow baking dish and let cool completely then refrigerate until hardened
4. Heat 2 T. of canola oil in a saute pan on medium high heat
5. Using a shaped cookie cutter, cut the grits and fry them until golden brown on each side
The finished result is crispy golden grit cake with a warm and soft center. Yum!!
Grits are a great side dish to fish, shrimp, and beef. I served these heart shaped ones with a recipe in February's issue of Southern Living for Grits and Grillades. You will love them!
