A Meal Fit for a.....President!

Last February, in honor of President's Day, Martha Stewart hosted Cristeta Comerford, the White House chef on her daily show. Ms. Comerford brought this delicious recipe for Turkey Lasagna with Spinach. We love us some Obama and I thought it would be fun to make this for JSM last President's Day. It was a hit and it's been a staple in our house ever since! The rich tomato sauce, made from scratch, (but really quick and totally worth it) is balanced with bits of onion, garlic, and basil, but the most amazing part of the meal is the salad served on the side. The dressing, also made from scratch, will have you wondering why you ever purchased that bottle of  vinaigrette and vowing never to do so again. A combination of shallots, cider vinegar, and honey on crisp greens with apples and nuts is a bright compliment to the cheese, pasta, and tomato sauce, but can be served with just about anything. It is now my go-to recipe for fresh salad dressing no matter what season. Enjoy!
